- Produces on a daily basis all bakery items requested for the restaurant, gourmet shop and staff canteen and for banquet and outside caterings according to function sheets and ensures a smooth and efficient operation.
- Ensure that standards are kept and adhered to and promotes good employee relations.
- Maintains the highest standard in quality and portion control, prepares store requisitions, checks expiry dates, identifies slow moving items and ensures that items are properly stored.
- Ensure that spoilage and wastage is kept to a strict minimum and report such in order to complete the necessary form.
- Ensure that all mise-en-place for the outlets is ready on time according to daily functions and level of business and record outgoings on a transfer sheet.
- Trains on the job and supervises personally.
- Maintains food hygiene and sanitation at all times.
- Consults with the Pastry Chef regarding suggestions that might improve quality and competitiveness.
- Performs any other duties asked by the Pastry Chef.
- Attends monthly communication meeting and training sessions as requested.
- Minimum 3/ 5 years in the same position in a 4/5 star hotel or in a commercial bakery.
- Good command of English Language.
- Baking diploma or formal Baking training is preferred.
- Extensive knowledge of Chinese cooking techniques, ingredients and authentic recipes.
- Knowledge of baking techniques, ingredients, and equipment.
- Attention to detail and ability to follow recipes accurately.
- Creativity and artistic skills for decorating baked goods.
